For my 2018 “Flavors” calendar, I invited friends and colleagues to contribute their favorite flavor combination, along with a recipe and a story. I received 12 great combos and I used those ingredients as my inspiration for 12 very unusual and unique paintings that make up this year’s calendar.

Growing up in South Texas I ate a lot of Mexican food, but no one used cilantro back then. First time I tried it, I almost gagged! Why would anyone ruin perfectly good food with that awful stuff? Now, cilantro and lime juice make it into most of my Mexican food. The combination of the two in this slaw is very refreshing and helps offset the spice and heat.

Mexican Slaw
Salad
½ head cabbage, thinly sliced
1 red pepper, diced
6 oz. cubed Monterrey Jack or other cheese (optional)
1/2 c. chopped cilantro (or more)
1 avocado, diced (optional)
Dressing
1/3 to 1/2 c. lime juice (3 or 4 fresh limes)
1 tsp. sugar
salt and pepper to taste
¼ tsp. dry mustard

I met Claudia through an online course given by Alyson Stanfield, and it felt like meeting a friend in person. She was so nice! At the time, she was producing calendars featuring her paintings, so we emailed and spoke on the phone about where to get them printed, what worked, what didn’t work. And we encouraged each other.
